This one-pot dish is super easy as well as delicious, thanks to the addition of tamarind – a fruit commonly used in Indian, North African, Mexican and South East Asian cuisine. The complex flavor of tamarind makes this dish seem like you slaved away in the kitchen, but in reality, you just chucked a few ingredients in a pot (I won’t tell anyone!).
Tamarind gives a tart-sweet flavor that really appeals to my inner love of these opposing tastes. It has high energy and fiber content, and is a great source for B Vitamins and a number of minerals such as calcium, phosphorous, magnesium and potassium. Tamarind is considered anti-inflammatory and has many medicinal uses such as a digestive aid, laxative, fever reducer and as an antiseptic.
TAMARIND LENTIL COCONUT RICE

- 3/4 cup French lentils
- 3 1/4 cups filtered water
- 3/4 tsp sea salt
- 2 Tbsp avocado oil
- 1 1/2 tsp caraway seeds
- 1 Tbsp tamarind paste
- 1 1/2 Tbsp water
- 1/2 cup cilantro chopped
- 1/4 cup plus 2 Tbsp shredded unsweetened coconut
- 2 1/4 tsp lime juice
