Tacos are a real crowd-pleaser in my family. They are a great way to appeal to the many tastes and preferences among family members. I often make a bunch of different options and let everyone assemble their own tacos! When it comes to picky eaters, this method helps give them the power of choice, while at the same time, allows you to set limits by determining the options. No more power struggles! Instead, turn dinner into a game for your picky eater. For example, you can focus on different colors of food and each color is a point. The person with the most points wins the game. You’d be surprised what can happen when you introduce a bit of healthy competition to the dinner table!
TEMPEH TACOS

Ingredients
- 1 8- oz package GMO-free tempeh sliced into 8 rectangles
- 1/2 Tbsp Mexican seasoning
- 1 lime juiced
- 3 Tbsp extra virgin olive oil divided
- 1 tsp sea salt
- 1 onion sliced thinly
- 3 handfuls of mixed salad greens
- 8 GMO-free corn tortillas
- tomatillo salsa to taste (recipe below)
- guacamole to taste (recipe below)
Instructions

Make marinade by mixing together Mexican seasoning, lime juice, 1 Tbsp olive oil and sea salt. Add tempeh and marinate for at least 30 minutes.

In a skillet, heat 1 Tbsp olive oil over medium heat. Add sliced onions. Reduce heat to medium low. Cook until caramelized, approximately 15 minutes.

In the same skillet (why wash another?!), heat remaining 1 Tbsp olive oil over medium heat. Add tempeh strips. Cook for 3-4 minutes, until golden brown. Flip tempeh and cook for another few minutes.

In a dry clean skillet, heat corn tortillas for a couple minutes on each side. Assemble tacos to your taste!
